It’s not high quality, but if I’m in a bind for a meal, a half pound of boiled spaghetti, a jar of sauce, and a cup or so of cheese microwaved until the cheese melts is a good filler-upper.

I love to cook and eat healthy. I make broiled salmon all the time. Norwegian salmon is the fattiest (healthy fat!) so it’s so moist and delicious. Just broil it for 10 minutes, seasoned with salt, pepper and cilantro (or chives) and serve with freshly squeezed lemon juice. So good and good for you! If you have company and want to go fancy, try this yummy recipe from Giada DeLaurentis of Food Network fame. I don’t like rosemary, so I just omit it.

    Elvis Presley’s Grilled Peanut Butter
    and Banana Sandwich
    2 slices of white bread
2 tablespoons of smooth peanut butter
    1 small ripe banana mashed
    2 tablespoons butter
Spread the peanut butter on one slice of bread and the mashed banana on the other. Press the slices gently together. Melt the butter (or to be truly Elvis-like, melt bacon fat!), over low heat in a small frying pan. Place the sandwich in the pan and fry until golden brown on both sides. Eat it with a glass of buttermilk. Please note: Elvis tended to eat 12-15 sandwiches a sitting

Hershey Pie….melt one large Hershey bar on 30 second intervals (so you don’t burn the chocolate), mix in one tub of cool whip, pour filling into graham cracker crust and refridgerate for atleast 15 minutes. It’s a quick fix and it’s delicious! If you’d like to add some extra pizzazz to the pie, shave some of the chocolate bar and add it as a garnish. HINT: Just use your potatoe peeler to shave the chocolate.

Chicken breast cut into cubes, pinch of salt, pepper, one garlic clove minced, quarter of a red onion. Saute everything, except chicken in olive oil and a pat of butter, then add the chicken and some red pepper flakes. Cook till chicken is done and spoon over rice, white rice or brown, doesn’t matter. love it.

Okay, so I’ve been on vacation and just found this contest. I don’t remember my favorite recipe off of the top of my head (I’m at work), but it is a tilapia recipe, so I pulled this one up from the internet–it actually looks pretty good though. I just hope I’m not too late to win the passes.

4 filets of Tilapia or Flounder

    1 cup beer of choice

1 cup cream of wheat, not instant

    2 tsp kosher salt

    1/2 tsp cayenne pepper

    1/2 tsp ground white pepper

1/4 cup extra virgin olive oil

    Tartar Sauce (optional)

    1. Place tilapia in a zip lock plastic bag, pour the beer it the bag. Close and refrigerate about 15 – 20 minutes before coating.

    2. Mix the cream of wheat with salt and peppers, place in a shallow dish (for coating fish) and set aside.

    3. To coat each filet, remove the fish from the beer (discarding the beer) and coat each fillet on both sides with cream of wheat mixture.

    4. Cooking option 1: Pan-Fry in olive oil until cooked through and golden brown. (about 3 minutes on each side, depending on the thickness of the filet.)

    5. Cooking option 2: Place coated files on a Silpat or parchment paper, spray with olive oil and roast at 425 degrees until done (about 15 minutes, depending on the thickness of the filet.)

    6. Serve warm with a dollop of tartar sauce on the side. Perfect served with rice pilaf or brown rice and string beans.
